One of Sydney’s most iconic landmarks, the Sydney Opera House, was the backdrop to the Canada Corroboree 2016 media lunch at Bennelong on Thursday 11 February. More than 30 Canadian tourism operators and associations gathered with the Australian media, including LATTE, to share what makes their nation extraordinary and so diverse. A special guest was the 2016 Calgary Stampede Indian Princess, Vanessa Stiffarm, a representative of the rich and colourful First Nations cultures of Canada, and her own Kainai First Nation or the Blood Tribe in particular.The innovative cuisine of Peter Gilmore was on show in the form of a masterful roasted carrot salad with almonds, feta and amaranth, alternated with a salad of poached chicken, while mains offered included roasted new season lamb and snapper fillet, served with young spinach, turnips, celery heart and umami butter. Twenty presentations between the courses covered diverse interests, including Canada 150, a nationwide celebration for the 150th anniversary of Canadian Confederation, planned for 2017.The Yukon showcased its wilderness, pristine lakes and wildlife (including bears), while Banff revealed its $26 million investment in a new gondola, transporting guests to an immersive theatre and restaurant complex. The Northwest Territories is home to stunning landscapes and the display of the Northern Lights, showing that is far more to Canada than bears and skiing.
