Chef James Viles to lead culinary safari at Bamurru Plains

Multi-hatted Australian chef and restaurateur James Viles will return to Northern Territory luxury safari camp, Bamurru Plains, to host the Wild Tastes of the Top End culinary safari from 16 to 19 June 2025.This three-night, four-day experience combines foraging excursions with a curated menu inspired by the local environment, featuring native ingredients specific to this Australian Top End habitat.As a regular visitor to Bamurru Plains, Viles has long drawn inspiration for his dishes from the surrounding landscape. Known for his sustainable approach to food, he promotes a food culture that aligns with Bamurru Plains’ own ethos. The safari menu will showcase locally sourced ingredients such as wild duck, buffalo rib, threadfin salmon, and crocodile.

“For me, the most exciting aspect of the Wild Tastes of the Top End experience is the vast and diverse amount of ingredients accessible in that part of Australia,” said Viles. “It really is its own eco-system, and there’s no other way to be closer to Australia’s finest native and wild ingredients than at Bamurru Plains.”The experience also includes airboat and 4WD safaris through the 300-square-kilometre floodplain and savannah woodlands bordering Kakadu National Park, offering guests the chance to immerse themselves in the natural beauty of this diverse region.Prices for the ‘Wild Tastes of the Top End’ culinary safari start from $6,275 per person, twin share, in a Safari Bungalow, including bespoke menus, hands-on culinary experiences, guided wilderness tours, accommodations, meals, beverages, and return charter flights from Darwin.
